Maftoul is similar to regular couscous but is more prominent in size. It is prepared the same way as regular couscous and makes for a heartier dish. It comes in a few different sizes and is made from partially-cooked semolina flour and water. Moroccan couscous pieces are the smallest, while pearl couscous (also known as Israeli couscous) is slightly more giant, with the chewy semolina balls roughly the size of little peppercorns.
