Cooking An Indian Meat Dish With Mirchi Masalay

Crockpot Beef Curry
Ingredients:
- 2 lbs Beef (chuck or round)
- 2 cups Onion finely chopped
- 2 tbsp Canola oil
- 2 tbsp (1.5 inch) Ginger grated
- 2 tbsp (3 cloves) Garlic minced
- 1 cup plain yogurt
- 2 Bay leaves
- 4 tbsp Curry Powder
- 2 tsp paprika (for color)
- 1 tsp Garam masala
- 2 tbsp Lemon juice
- ½ tsp Salt
- ½ tsp Pepper powder
- 1 cup Basmati rice
Directions:
- Trim excess fat and cut the beef into large bite-size cubes that are about 2 inches.
- In a saute pan, saute onions in oil using medium heat for about 5 to 7 minutes until they are golden.
- Add the ginger and garlic - saute another minute. Then add the bay leaves and spices: curry powder, cayenne, paprika, garam masala. Add 2 tbsp of water.
- Add the yogurt and beef into the pan. Season with salt and pepper. Then add the lemon juice.
- Stir making sure everything is well combined then transfer to the Crockpot
- Cook for 6 to 8 hours on low or for 3 to 4 hours on high.
- Served with a sprinkle of chopped fresh coriander and Basmati rice.

Ingredients:
- 3.5 tbsp ghee
- 1 cinnamon stick
- 6 green cardamom pods
- 4 cloves
- 1 large onion, finely chopped
- 3 cloves garlic, finely minced
- 1 tbsp ginger, finely grated
- 5 tbsp tomato passata sauce
- 1 tsp salt
- 1.5 lb of boneless lamb shoulder, cut into ½ inch cubes
- 1.5 cups beef broth
- 2 tbsp paprika
- 3/4 tsp chilli powder
- 4 tsp ground coriander
- 4 tsp ground cumin
- 2 tsp turmeric powder
- 1/4 tsp nutmeg
- 1 tsp garam marsala
- 1/2 tsp fennel powder
- 1/2 cup plain yogurt
- Chopped coriander leaves
- Basmati rice
Directions:
- Melt ghee over medium heat in a large pan. Add cinnamon, cardamom and cloves and cook for one minute.
- Add onion and cook for 7 minutes, stirring frequently.
- Add the garlic and ginger, cook for another minute.
- Stir in paprika, chili powder, coriander, cumin, turmeric, nutmeg, garam marsala, and fennel powder. Cook for 30 seconds.
- Mix in the tomato passata sauce and salt, then add beef broth and mix.
- Add lamb, stir, bring to simmer.
- Place the lid on and adjust heat to low so it is simmering gently.
- Cook for 1 hour 45 minutes, giving it an occasional stir, until the lamb is tender and reaches 145 degrees F.
- Remove the lid, and continue cooking for another 15 minutes (to reduce sauce slightly) - lamb should be very tender by this stage.
- Stir in the Yogurt, and sprinkle with a pinch of garam marsala and fennel. Cook for another few minutes.
- Serve with basmati rice, coriander, and plain yoghurt.

Chicken Tikka Masala
Chicken Marinade Ingredients:
- 1.5 lbs boneless and skinless chicken thighs cut into bite-sized pieces
- 1 cup plain yogurt
- 1.5 tablespoons minced garlic
- 1 tablespoon ginger
- 2 teaspoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon Kashmiri chili
- 1 teaspoon of salt
Sauce Ingredients:
- 2 tablespoons of oil
- 2 tablespoons Ghee
- 1 large onion finely diced
- 1.5 tablespoons garlic finely grated
- 1 tablespoon ginger finely grated
- 1.5 teaspoons garam masala
- 1.5 teaspoons ground cumin
- 1 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1 cup tomato passata sauce
- 1 teaspoon ground red chili powder
- 1 teaspoon salt
- 1 1/4 cups of coconut whipping cream
- 1 teaspoon brown sugar
- 1/4 cup water (if needed)
- 4 tablespoons fresh coriander to garnish
- 1 cup Basmati rice
Instructions:
- Marinade chicken with all of the ingredients for the marinade list for at least 10 minutes. However, It is ideal to marinade the chicken overnight.
- Heat oil in a large pan using medium heat. Add chicken pieces making sure not to crowd the pan. Fry chicken for about 3 minutes until brown. Set the chicken aside, keeping warm.
- Melt ghee in the same pan and saute onion until soft.
- Add garlic and ginger, saute for another minute.
- Add garam masala, cumin, turmeric and coriander. Saute for 30 seconds, stirring occasionally.
- Add tomato passata sauce, chili powder and salt. Simmer for 15 minutes, stirring occasionally until the sauce thickens.
- Add coconut cream and brown sugar stirring into the sauce.
- Return chicken that was set aside to sauce so it can continue cooking.
- Cook at a simmer for about 10 minutes (until chicken reaches 165 degrees F) adding in additional water as needed.
- Garnish with fresh coriander and serve with Basmati rice.
