Hey Foodie Friends! Hope you all had wonderful Diwali. I’m here with Bagharay Baingan recipe. 

     Ingredients,

    • 2 tsp Sesame seeds
    • 2 tsp Shredded coconut
    • 2 tsp Cumin seeds
    • 1 tsp Coriander seeds
    • 1/4 Cup Peanuts
    • 1 Large yellow onion
    • 1 tsp Fenugreek seeds
    • 1.5 tsp Mustard seeds
    • 1.5 tsp Cumin seeds
    • 7-8 Curry leaves
    • 1.5 tsp Nigella seeds
    • 250 gms Eggplant
    • 8-10 Green chillies
    • 2 tbs Ginger/garlic paste
    • 6-7 Button red chillies
    • 1/4 tsp Turmeric powder
    • 1.5 tsp Red chilli powder
    • 1/2 Tamarind pulp
    • Salt per taste

    Steps to make it,

    • In a pan, add below items and roast them for a paste
      • Sesame seeds
      • Cumin seeds
      • Coriander seeds
      • Shredded coconut
      • Peanuts
    • Once roasted, blend it 
    • In wok, add oil and fry large onion rings
    • After onion rings turn yellow/brown, add water and blend them
    • In wok, add oil and below items 
      • Fenugreek seeds
      • Mustard seeds
      • Cumin seeds
      • Curry leaves
      • Nigella seeds
    • Stir it for few minutes
    • Add below items, and keep stirring it
      • Eggplant
      • Green chillies
      • Ginger garlic paste
      • Red button chillies
      • Onion paste
      • Salt per taste
      • Turmeric powder
      • Red chilli powder
    • Add water in the paste, and mix it well
    • Add the paste in the wok, when oil separates and mix it well
    • Add tamarind pulp & water
    • Cook it for 20 -25 min

    It's ready to be served!
